Italian Wedding Soup

Wedding soup or Italian wedding soup is an Italian-American[1] soup consisting of green vegetables and meat. It is popular in Northeastern United States, especially Youngstown, Ohio and Pittsburgh, Pennsylvania where it is a staple in many local restaurants.

Ingredients
Wedding soup consists of green vegetables (usually endive and escarole or cabbage, lettuce, kale, and/or spinach) and meats (usually meatballs and/or sausage) in a clear chicken-based broth. Wedding soup sometimes contains pasta, noodles, cavatelli, lentils, or shredded chicken.

Origin
The term "wedding soup" is a mistranslation of the Italian minestra maritata, which is a reference to the fact that green vegetables and meats go well together. Some form of minestra maritata was long popular in Naples before pasta became an affordable commodity to most Italians, though the modern wedding soup is quite a bit lighter than the old Italian form, which contained quite a few more meats than just the meatballs of modern Italian-American versions.

Popularity spread
The soup is gaining popularity even outside of the United States North East, and can be easily found in canned soup form in most grocery stores.[2] In addition, the Italian-American casual dining chain Olive Garden has as one of its signature soups a soup called Zuppa Toscana, which uses potatoes instead of pasta and spicy Italian sausage rather than meatballs.

This soup is basically homemade chicken soup with mini meatballs served as an appetizer at Italian weddings. Wedding in the "old days" were not elaborate $10-50k Hollywood productions. They were simple, fun, and quite frankly, there was not a lot of money. If you can recall The Godfather motion picture, they had money, and you see that was in their backyard. Back then, it was about family, friends, and a humble but joyus celebration.
